Join Chef Lee Cooper in welcoming Kristian Eligh, Executive Chef of Marilena Cafe and Raw Bar in Victoria, BC, which was recently awarded No. 1 Best New Restaurant on the 2024 Canada's 100 Best List.

With experience at Michelin-starred restaurants like Jean-Georges in New York, The French Laundry in Napa, and Blackbird in Chicago, Chef Eligh also spent six years as Culinary Director for Vancouver's Hawksworth Restaurant Group, earning accolades such as Vancouver Magazine’s Chef of the Year in 2011 and 2012.

Chef Eligh and Chef Cooper first worked together as Sous Chefs at Market by Jean-Georges Vongerichten in 2009, before Chef Eligh became Chef de Cuisine and Chef Cooper went on to open L'Abattoir in 2010. These two ex-culinary colleagues are sure to fall into their familiar ways of working side-by-side in the kitchen making this collaboration an unforgettable experience!

Published on Main’s Chef Gus Stieffenhofer-Brandson is excited to welcome award winning Chef Lee Cooper of L’Abattoir and legendary Chef Scott Jaegar, formerly of Pear Tree, into his kitchen for an exclusive collaborative dining experience. Both Chef Gus and Chef Lee spent time working as sous chef under the tutelage of Chef Scott Jaegar as his award winning restaurant, Pear Tree. For Gus to now be able to welcome the two of them to join him for this exclusive dinner at Published is truly an honour and will likely be one of the highlight dining experiences at Published this year.

Guests can expect a multi-course menu that will showcase the expansive talent of each chef and their unique styles they have developed through their longstanding careers.

Wine director Jayton James and bar manager Dylan Riches are currently working on beverage pairings, which will feature a variety of wines, and summer-inspired cocktails.

Botanist at the Fairmont Pacific Rim is set to host an extraordinary collaborative dinner on July 3, 2024, bringing together a stellar lineup of Michelin Guide recognized culinary talents for an evening to experience a confluence of ‘Tastes of the West’.

The dinner will feature Hector Laguna of Botanist, Gus Stieffenhofer-Brandson of Published on Main, Kristian Eligh of Marilena, Lee Cooper of L’Abattoir, and Damon Campbell and Kate Siegel of Fairmont Pacific Rim. Each chef will contribute their unique vision through their dish to create a six-course, wine-paired dinner with Black Hills Estate winery of Oliver, BC.

The Oakridge x Pac Rim Patio Pop-Up is back for another year outside the Fairmont Pacific Rim, and the theme this year is highlighting Vancouver’s celebrated culinary community, bringing some of the city’s top chefs together to showcase their globally influenced cuisine.

L’Abattoir’s Chef Lee Cooper has been invited to contribute a dish that will be featured on from Thursday, August 10th to Sunday, August 13th and can be enjoyed at the Pac Rim Patio. Partial proceeds from all featured chef dishes sold will go towards our friends a the BC Hospitality Foundation.

The Pac Rim Patio welcomes guests from Wednesday to Sunday, from 12:00 p.m. to 8:00 p.m starting June 1st. Immerse yourself in the atmosphere with live music every Friday and Saturday until 8:00 p.m., and Thursdays and Sundays until 6:00 p.m.

Seating at the Pac Rim Patio Pop-Up is first-come, first-served and is subject to weather conditions.

Kick off Vancouver Cocktail Week with us on Tuesday, March 7th when we welcome renowned bartender Kaitlyn Stewart as our guest behind the bar from 5pm to 7pm. Kaitlyn is known for her innovative cocktail creations and won the 2017 World Class Bartender of the Year. Her cocktails will be available at the bar or in the dining room that evening.

Throughout the rest of the week, come explore the botanicals in Tanqueray Nº TEN during our happy hour at the bar from 5pm to 7pm . Bar Managers, Dave Bulters and Rob Williams and their team will be crafting the feature cocktails for the week around four key flavour profiles; chamomile, lime, grapefruit and orange.

Join us for an unforgettable dining experience hosted by two of Vancouver's top culinary talents, Chef Lee Cooper and his invited guest, Chef Alex Chen of Boulevard Kitchen & Oyster Bar and the recently opened, Wild Blue Restaurant + Bar in Whistler with BC wines paired by L'Abattoir's Head Sommelier, Andrew Forsyth.

This dinner has been years in the making with both notable Vancouver chefs taking time away from their busy restaurant kitchens in order to host a collaborative event together in celebration of Dine-Out Vancouver!
